Taking everything it offers us from nature, trying to keep it unchanged to share genuine flavours.
(Puro Carmignano)
EXTRA VIRGIN OLIVE OIL
Inside the bottles in our extra virgin olive oil, there is not “only oil”. There are work, fatigue, perfumes and traditions that speak of our territory. With a harvesting method that is carried out manually and with the few hours that pass between the harvesting and cold pressing done in the mill, the classic Tuscan varieties (moraiolo, piangente, leccino and frantoiano) are merged into a single blend to leave intact taste of a unique oil in the world that has always distinguished this area of Tuscany.
JAMS and COMPOTES
All our jams are produced only and exclusively with fruit and sugar, without adding preservatives or thickeners. We have divided them into “traditional” and “special”.
Our compotes are sweet and sour fruit and / or vegetable jams based on sugar and wine vinegar, designed in combination with cheeses, cured meats, boiled or grilled meats.
HONEY e “NOCCIOMIELE”
It’s easy to say Honey; monoflora or wildflower? Liquid or crystallized? Sweet or aromatic? You know, the taste is not discussed, but above all there is no question about the quality. Both the quality of the product, the quality of life, ours and of our bees. We firmly believe in this; because, as they say, are not the bees that they need us, we who have need of them!
CARMIGNANO DRIED FIGS
SLOW FOOD Presidium. The production and consumption of Carmignano dried figs has very ancient traditions. Due to their small footprint and high energy value, they were particularly appreciated by farmers when working in the fields. Harvesting and drying still take place in a traditional way as well as the formation of the “picce”, whose best processing every family still keeps secretly today.
AGRESTO
Agresto is a spicy “condiment” with a sweet and sour flavor used since Roman times. A sort of Tuscan balsamic vinegar, made from grape must, vinegar, honey, onion, garlic and various spices. It can be used both “raw” as a condiment and blended in cooking for the preparation of some dishes in which you want to enhance the spices contained in the agresto itself. The Agresto reduction then, can be used as a garnish on meat, fish and even dessert.
